Minnie or any variation of that name was not in the PEI Baptismal Index as a daughter of Henry and Matilda.
There was a daughter Mariah, age 2 in the PEI 1881 Census with Henry and Matilda. The family was not in the 1891 Canadian census, so was in the United States sometime after 1881. The next US census was in 1900. By then, Henry and Matilda were living in Washington State with daughters Margaret (27) and Minnie (20). Minnie's date and place of birth were April 1880 in Canada on this census. On the form, Matilda said that she had had 11 children, 8 of whom were still alive in 1900.
Minnie herself gave her place of birth as Massachusetts, and a date of birth ranging from 1882-1885 on later census forms. It is possible that the daughter Mariah, born around 1879 had died, and that Henry and Matilda had a daughter Minnie, around 1882 in Massachusetts.
According to her brother William Havelock's obituary, Minnie was a Mrs. Burke at the time of his death. George P. Burke married Minnie Dymond in Pierce in 1903. Witnesses were Frank A. Williams and Alice A. Williams (who was probably Alice Dyment Williams, a cousin).
Minnie (Mrs. George Burke of Tacoma) was also mentioned as surviving her brother George in his obituary in 1953. According to census records, George and Minnie had a son Ralph in Washington State, were living in California when daughter Dorothy was born, and were in Yuma, Arizona in 1930.
Minnie died in Arizona in 1962 at the age of 79. Her obituary noted that she had been born in Massachusetts. All of this points to a second daughter named Maria or Minnie - and Henry and Matilda had named their daughter Angelina after a daughter with that name had died.
